The creative work of Jordi Herrera takes place in the kitchen and the workshop. That’s where he creates new gadgets to get flavours and textures imagined in what he calls the “psychological palate”. He innovates there, seeks different solutions to attain an extensive palette of flavours” to surprise the table.

His gastrolab has produced innovations such as:

  • Blowtorch cooking

    He introduces a blowtorch in the kitchen, only used for pastry-making.

  • Xof technique

    He invents a technique for wrapping a liquid in a solid, turning it into a sphere.

  • Nail grill

    He creates a nail grill to cook tenderloins and steaks without losing their juices.

  • Steam tube

    He brings a steam tube into the kitchen to cook crustaceans in their shell.

  • Heated smoker

    He invents a heater smoker: a mini-oven that cooks and smokes at the same time.

  • Centrifuge for cooking

    He builds the first centrifuge that cooks meat without losing juices, making it turn.
